Ingredients

  • 4 potato peeled & cut into chips
  • sea salt
  • black pepper freshly ground
  • 5 ml rapeseed oil 1 tsp
  • 1 onion chopped
  • 2 cloves garlic crushed
  • 400 g beef mince
  • 30 ml soy sauce 2 tbsp
  • 1 tsp ground cumin
  • 1 tsp paprika
  • ½ tsp dried oregano
  • ½ tsp onion powder
  • 1 tbsp tomato puree
  • 400 g passata
  • 2.5 ml Worcestershire sauce ½ tsp

Taco Sauce

  • 45 g mayonnaise light, 3 tbsp
  • 52.5 g Greek yogurt 3 tbsp
  • ½ tsp mild chilli powder
  • ½ tsp smoked paprika
  • ½ tsp garlic powder
  • ¼ lime juiced

To Serve

  • 2 spring onion chopped
  • 60 g cheddar cheese grated

Instructions

  • Place the chips in the air fryer. Season well with sea salt & black pepper. Spray with a little olive oil. Air fry for 20 minutes at 200C/400F (shaking and turning them every 5 minutes).
  • Heat the rapeseed oil in a wok over medium-high heat. Add the onion and garlic; stir fry for 2-3 minutes. Then add the mince, soy sauce, cumin, paprika, oregano and onion powder. Cook for 5-7 minutes until the meat has browned, stirring regularly to break down the mince.
  • Stir in the tomato puree, passata and Worcestershire sauce. Simmer over medium heat for 10 minutes until the sauce starts to reduce.
  • Make the taco sauce by combining all the ingredients in a bowl and mixing together well. Add a teaspoon of water to loosen.
  • To assemble your taco fries - place your chips in a bowl and top them with the taco mince. Drizzle generously with taco sauce. Sprinkle over with spring onion and cheddar cheese. And enjoy!

Notes

  • If you don't have an air fryer, you can bake your chips in a preheated oven at 200C/180C Fan/Gas 6/400F for 25-30 minutes or until golden & cooked through.
  • You can make this dish low-carb by omitting the chips and making lettuce wraps instead.
  • If you have space - double up on the taco mince and freeze some portions.  This mince is ideal to serve in a salad, a wrap or a baked potato.
