Ingredients: 5 ml rapeseed oil (1 tsp); ½ onion (finely chopped); 1 stick celery (finely chopped); 1 clove garlic (crushed); 75 g mushrooms (finely chopped); ½ carrot (peeled & grated); ½ red pepper (deseeded & finely chopped); ½ tsp dried oregano; ½ tsp dried thyme; ½ tsp smoked paprika; 40 g red lentils; ½ tbsp tomato purée; 100 ml vegetable stock; 30 g wholemeal breadcrumbs; 15 g walnuts (chopped); 15 g cashew nuts (chopped); 15 g pecan nuts (chopped); 40 g cheddar cheese (grated); 1 egg (lightly beaten); 3 g fresh parsley (chopped, 1 tbsp); sea salt; black pepper (freshly ground); 5 ml rapeseed oil (1 tsp); 1 clove garlic (crushed); ½ sprig fresh rosemary (chopped); 150 g passata; 2.5 ml balsamic vinegar (½ tsp); 2.5 ml maple syrup (½ tsp)
