Ingredients: 7.5 ml rapeseed oil (½ tbsp); ½ red onion (sliced); 2 clove garlic (crushed); 250 g jackfruit (tinned) (drained, rinsed, and chopped ); 60 ml water; 7.5 ml maple syrup (½ tbsp); ¼ lime (juiced); 1 tsp mild chilli powder; ½ tsp ground cumin; ½ tsp smoked paprika; salt (a pinch); 4 taco shells (hard or soft ); ½ avocado (sliced); ¼ red onion (thinly sliced); 6 g fresh coriander (roughly chopped, 2 tbsp); ¼ lime (wedges - for serving)
